香橙羊排 Orange Lamb Cutlets

材料/Ingredients

2 粒蒜瓣,壓碎
• 2 garlic cloves, crushed
1 湯匙特級初榨橄欖油
• 1 tbs extra virgin olive oil
1 個橙子,榨汁
• 1 orange, juiced
2 湯匙混合香草
• 2 tbs mixed herbs
8 片羊排
• 8 lamb cutlets
1 個新鮮的檸檬
• 1 fresh lemon
海鹽、胡椒,適量
• Sea salt and pepper, to taste

做法/Instructions

將大蒜、橄欖油、橙汁以及香草混合在一個小碗
• Combine garlic, olive oil, orange juice and mixed herbs in a small bowl
將羊肉片放在盤子裏,在上面倒入混合調味料腌製
• Place lamb cutlets on a plate and pour the mixture over
蓋上蓋子並放進冰箱至少10 分鐘,但最好是幾個小時
• Cover and leave in the fridge for at least 10 mins but ideally a couple of hours
用中火加熱煎鍋,並放入肉排
• Heat frying pan over medium heat and add the cutlets
慢火每邊煎4-5 分鐘,直到煮熟
• Cook the cutlets for 4-5 mins on each side until cooked through
在烹調時擠壓檸檬汁在炸肉排上,製出季節風味
• Squeeze lemon over cutlets whilst cooking. Season to taste

食用/Serving and storing leftovers

立即食用,在冰箱中存放最多3 天或冷凍長達4 個月
• Serve immediately, store in the fridge for up to 3 days or freeze for up to 4 months
